Rub with olive oil. Mix spices and coat the roast. </li><li>Let rest at room temp for 1 hour.</li><li> Heat grill to 300–325°F (indirect heat). </li><li>Place the roast fat side up on the cooler side. Cover and grill for ~2–2.5 hours, until the internal temperature reaches 120°F (for medium-rare). (Optional) Sear over high heat for 1–2 mins per side. </li><li>Rest under foil for 20–30 mins.
