20 Dollar Chef - Tacos Al Pastor

Today on 20 Dollar Chef, I go full taco stand. I'm grilling al pastor tacos. I’ve always loved pastor. I always order asada and pastor tacos when I’m drunk at a taco stand. 

Pork shoulder is cheap as fuck. 1.99 a lb. The achiote paste can be found cheaper in the grocery store rather than $10 I paid on Amazon. I guess I paid extra to not have to run around searching 10 stores for it. I got the gojo skewer on Amazon as well. That was more expensive than I’d like. ($40) But I really wanted to shave the meat off like they do at real tacos stands, So I bought it.

I’d suggest letting this marinate over night. If that’s not an option, give it 2 hours minimum. 

I closed the grill and let this cook for a strong 30 mins before I opened it. It will get crispy on the outside and the inside is obviously going to cook slower than the outside. Shave off some, pull it onto your cutting board and chop it up. Make sure to close your grill back to continue cooking the pork. This is a fun recipe and a great choice to make for some friends. You will get a shit ton of tacos with 5 lbs. of pork shoulder. So find that inner tacos stand cook inside you and get crazy.

Pastor Marinade:

• 5 / 10 lbs. of pork shoulder 
• Achiote paste
• 1 Pineapple
• 1 cup pineapple juice ( Per 5 lbs. of pork  shoulder.) 
• 3/4 cup white vinegar
• Chili powder 
• Garlic powder 
• Cumin
• Oregano
• S&P

For the tacos:

• tortillas 
• Chopped jalapeño
• Chopped onion
• Chopped cilantro
• Chopped pineapple 
• Limes
• Salsa if you need it.
